I have a tip on how to make a yummy, nutritious raw carrot salad. Start by using a vegetable peeler to shave the carrot going from the large to narrow end. Repeat this process for two more carrots. Set the carrot shreds in a bowl and add in two chopped green onions and leave it aside. To make the dressing, combine the following ingredients in a little jar or a small bowl: 2-3 grams (1/2– 1 teaspoon) of grated ginger, 8 milliliters (1/2 tablespoon) of sesame oil, 15 milliliters (1 tablespoon) of rice vinegar, 15 milliliters (1 tablespoon) of agave, 15 milliliters (1 tablespoon) of lime juice, 15 milliliters (1 tablespoon) of soy sauce, a pinch of salt and pepper and red chili flakes. Mix it thoroughly or shake well if you’re using a jar. Pour this mixture over the shaved raw carrots and green onions and toss everything until they are coated with the dressing. Garnish it by sprinkling some sesame seeds, parsley, and cilantro. Bon Appetit!
