I love creating delicious meals with root vegetables. Here is a neat tip on growing my favorite – rutabagas. Rutabagas are a Brassica family vegetable that are a great addition to growing in your garden. Although rutabagas often get confused by their more popular cousin, the turnip, they are larger and have softball-sized roots that are typically golden yellow to purple-brown in color. They are less spicy too, making rutabagas more suitable for children. This root is rich in calcium, fiber, potassium, and vitamin C. Rutabagas can be prepared in a number of ways including baked, roasted, sautéed, fried, boiled, and mashed. They give off a mild, sweet and earthy flavor that goes well with many other ingredients. The sweet flavor develops from sowing the seeds at the appropriate time: rutabagas require a lengthy growing season and taste best after they have matured during the coldest weeks of the season.
